This very simple recipe takes only 30 min to prepare but fills you with a good mood for the rest of the day. LOVE IT.
Serves 4 (four toast)
4 red onions
200 ml red wine
200 ml balsamic vinegar
125 g butter
1 tbs parsley, chopped
4 chopped leaves of sage
4 sliced of white bread.
1.Peel the onions and slice them into rounds. Melt half of the butter in sauté pan and add red onion rings. Cook for 10 min over medium heat until soft. Stir them occasionally. When ready, add red wine, vinegar and sage. Increase the heat and let it cook until the liquid has almost gone and the onions are sticky. Stir it time to time while cooking and remember- you are not making a marmalade. Onion should still have some of a their structure.
2. Spread the remaining butter on the bread, place it in the oven and toast it for about 1o min or until golden brown and crisp. Prepare your avocado by cutting in half, removing the skin and slicing.
3. In the meantime prepare a deep saucepan, fill it with water and bring it to simmering point. Break your egg into ramekin or cup. Stir the water to create a whirlpool and slowly drop your egg into the centre of the whirlpool, then simmer in the water for 3 min. Remove the egg from the pan and place it on the kitchen towel or plate. Repeat with the other 3 eggs.
4. Place a piece of toasted bred on each plate, cover with the sticky onions, slices of avocado and then place a poached egg on the top. Sprinkle with finely chopped parsley. Delicious!
