White asparagus soup

While leaving in Germany I tested many recipes for asparagus soup and this is THE best. Simply. I have cooked it for my daughter’s  christening party and it was a great success among my German guests. I didn’t need better recommendation. Germans are very proud of their Spargel ( Asparagus in German) and so do I of my soup.



For 4 portion you will need

  • 750 g/1lb 2oz white asparagus
  • 50g/2oz unsalted butter
  • 1 shallot, finely chopped
  • 700ml/1¼ pints chicken stock
  • 70ml/4½ tbsp crème fraiche
  • 2 egg yolk
  • 2 tbsp chopped parsley, to garnish
  • white pepper
