Sweet potato and parmesan mini flatbreads

This is my own recipe. It could not be easier to cook a snack for the little one. I hope you will enjoy it too. It works fantastically on its own but try it also with hummus.

You need

– 250 g sweet potato

– 150g flour

– 1tsp parmesan

– 1 tsp fresh oregano

Method

  1. Peel the potato, cut it roughly and place it in a saucepan with lots of cold water. Bring to the boil and cook until the potato is tender, but not falling apart (about 10-15 minutes depending on the size of your pieces).

  2. Drain it and when it is still warm, mash it until smooth or pass through a ricer, then set aside to cool completely. In meantime lay your baking try with baking paper and set the oven on 180C.

  3. Season the cooled potatoes with parmesan and herbs and add the flour. Bring the mixture together to form a dough.

  4. Sprinkle some flour on a clean work surface and roll out the dough into thick sausage shape. With a knife cut the roll into 6 pieces.

  5. With your fingers flatten each piece on our baking tray, forming a round “biscuit” about 0.5 cm thick. Sprinkle some extra parmesan and oregano on top of each biscuit. Place in the oven and bake for 15 min. Breads should have hard skin but stay soft inside.
