Look it is almost 5 o’clock on that little watch. Is it not amazing that kids do not feel that time is running? I make this little muffins using Paul Hollywood’s recipe but I have adjusted it to kids needs. So no sugar! Instead I used soft dates as a sweetener. It worked perfectly ok. They are perfect for kids parties, birthdays or playgroups meetings. They are delicious and sweet enough for moms too so no double baking! Enjoy!
- 110g/4oz flour
- 110g/4oz butter
- 60g/2½oz soft dates
- 2 free-range eggs
- 1½ tsp baking powder
- 250g/ 8 oz berries (anything you want)
Cut dates in very small pieces or just puree them.
- Cut half of the fruits in very small pieces (not if you use blueberries)
Cream the butter and dates, then slowly add the eggs, mix for three minutes. Add the flour, baking powder and stir to combine, then refrigerate for at least an hour, preferably overnight. Letting the dough rest make it more moist and it will also stay fresh longer.
Place a teaspoon of dough in each muffin case, then half teaspoon of cut fruits and then top up with one more teaspoon of mixture.
Bake in an oven set at 200C/400F/Gas 6 for 10-12 minutes, or until golden on top.
