This super fast salad is great as a side dish for BBQ but I also have it on its own as a lighter lunch option.
500 vegetable broth
200 g bulgur
70 g feta cheese
1-2 garlic clove crushed (depends how much you love garlic)
juice of 1/2 lemon
50 ml olive oil
2 spoons of fresh herbs ( parley and mint works best)
1 teaspoon of turmeric
1. Bring broth to boil and add bulgur. Cook until soft (about 10 min). Drain. Set aside to cool.
2. Cut feta in very small cubes, add half of the oil, herbs and mix.
3. To already cooled bulgur add the other half of the olive oil, crushed garlic, turmeric and combine. Ad salt and pepper to taste.
