Ricotta and Apricots

Simple yet delicious idea for a healthy dessert or snack for children.


For one portion

2-3 small apricots

5-6 tsp of ricotta

1 tsp ground pistachios

runny honey or maple syrup (optional)


  1. Preheat oven grill.  (You can also use frying pan or pan-grill). Cut apricots in halves and remove stone. Transfer them to a small baking dish or place immediately on the pan. Bake, rotating once, until apricots are slightly caramelized and juicy-  5 to 7 minutes.

  2. Remove apricots from oven. Let cool slightly and top with ricotta , pistachios and honey. Serve immediately.
