Quick cucumber kimchi

Hi there! How was your weekend? Mine was SUPER busy! I was trying plenty of new recipes and improving some of my new discoveries. Have you tried kimchi yet? Kimchi is super healthy fermented vegetable dish from Korea. Kimchi tradition and a way of preparation has been placed on UNESCO list of Intangible Cultural Heritage.  Also more and more people has been proving it’s health benefits.  Traditional kimchi is super hot/spicy and  if you never tried it or never tried fermented food I recommend you to start with a lighter and quicker version which I developed recently. In next posts I will also show you how to integrate kimchi with your dinner.

Ingredients (in our family it is enough for 2-3 people)

1 long cucumber (around 400g)

250 ml cold water

1 tbsp salt

1tsp sugar

1 cm (10g) of ginger (grated)

1/2 tsp dried hot pepper or half of fresh chilli pepper

1 clove garlic (crushed)


You will also need 1 jar or container 500 ml capacity and veg spiralizer (but you can also just cut your cucumber in slices or use vegetable peeler)


  1. Wash cucumber and spiralize it (with skin)
  2. Mix all other ingredients with water making sure the sugar and salt has been dissolved.
  3. Place cucumber in the jar and fill with prepared salty water. Leave it in warm place for 30 min to 1 hrs.

Enjoy it with cold meats.
